Beef n’ Broccoli Stir Fry Bowl For the Beef Marinade: - 400g beef rump or topside, thinly sliced against the grain - 1 tbsp soy sauce - 1 tsp sesame oil - ½ tsp white pepper - 1 tsp corn flour - 1 tsp baking soda - 2 tbsp cold water For the Stir Fry: - 1 tbsp neutral oil (vegetable or canola) - 1 small brown onion, thinly sliced - 1½ cups broccoli florets, quartered - 2 garlic cloves, grated - 1½ tbsp oyster sauce - 1 tsp light soy sauce - 1 tsp sesame oil - 1 tbsp chilli crisp or chilli oil (optional, adjust to taste) To Serve: - 1 egg (optional) - Steamed rice 1. In a bowl, combine sliced beef with soy sauce, sesame oil, white pepper, corn flour, baking soda, and cold water. Massage the mixture into the meat for 1–2 minutes. Let it sit for 5 minutes. 2. Heat 1 tbsp of neutral oil in a frying pan or wok over high heat. Fry the beef in two batches until well-browned on both sides. Remove and set aside. 3. In the same pan, add the onion and stir for 1 minute to soften. Add the broccoli and cook for another minute until vibrant green. Add the grated garlic and cook for 30 seconds. 4. Return the beef to the pan. Add oyster sauce, soy sauce, sesame oil, and chilli crisp (if using). Stir well to coat everything evenly. Remove from heat. 5. Fry an egg to your liking, ensuring the top is slightly cooked so the yolk stays intact. Place the egg yolk-side down in a bowl. 6. Spoon the beef and broccoli stir fry over the egg. Top with steamed rice. Press the rice down gently to compact the layers. Tips for cooking on stainless steel ? If you’re completely new to cooking on stainless steel pans, here are the very basics: 1. Preheat your pan. When heating up, the metal will expand and close up microscopic pores on the surface. When too cold, the tiny gaps cause the food to stick 2. The water drop test. I do this test every time I cook on stainless pans. Drop a small amount of water onto the hot pan. If it sizzles and evaporates, it’s not hot enough. If it beads up and dances around the pan, you’re ready to cook. It’s called the Leidenfrost effect 3. Do I need Oil/Fat ? Yes, you do. The oil/fat aids in filling those tiny pores and prevents your food from bonding directly to the pan by creating a smooth layer between your food and the metal. Make sure to add your oil/fat AFTER your pan is preheated. “How tf do you scramble eggs on stainless?” When preheating stainless steel pans there are a few ‘levels’ of heat you are aiming for. 1. 160-180°C. Perfect for proteins, eggs (with enough fat), sautéing. 2. 190-200°C. For searing, getting a crispy crust and browning. Obviously no one will be standing near their pan with an infrared thermometer so as a general rule of thumb, to reach 160-180°C heat your pan on medium for 2-3 minutes. I will check 1-3 times with the water drop test until it barely reaches temperature, dry up any residual water and add my fat in followed by whatever I’m cooking. Ingredients: - 150g macadamias - 200g caster sugar - 160g glucose syrup - 60g water - 113g unsalted butter - 3G baking soda 1. Line a baking sheet with parchment or a silicone mat. Lightly grease. 2. In a heavy pan, combine 200 g sugar, 160 g glucose syrup, and 60 g water.Heat over medium, stirring until dissolved. Then stop stirring and cook until bubbling. 3. Add 113 g butter and continue cooking until the mixture reaches 150°C (hard crack stage) and turns amber. 4. Remove from heat and quickly stir in 150 g macadamias and 3 g baking soda 5. I got my hands on some SERIOUS meat… This is a marble score 10+ Australian Wagy Strip and tbh, as much as I love beef, I don’t think I enjoy eating pieces of Wagyu at this high of a marble score unless it’s at a Japanese/Korean Bbq. For me it’s just a bit too much and I find that I get so full so quickly. That being said, it’s always a great meal once in a while.
