Fast and Simple can be just as good if done right. The coarse salt and pepper from @alfrugonishop TX.SP combined w/ sweet and spicy from @melindasfoods Hot Honey is a perfect marriage of flavors for ribs. _______________________________________ 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨: • Score membrane then insert hooks for hanging. • Olive oil as a binder then season w/ coarse salt and pepper. • Get your barrel smoker fired up using cherrywood for smoke then hang ribs. • Smoke until you hit some nice color and internal temp is 170F. Roughly 2hrs. • Once it reaches the 170F range remove then wrap in aluminum foil with butter and hot honey on both sides. Pastrami Brisket This pastrami recipe is from my cookbook and this was probably my best pastrami brisket to date and I’ve only done three so far. Even though it was the best one yet, I know I can still do better. One thing I messed up on: during the 7-day brine, I didn’t rotate the meat a few times like I should’ve. I think that led to the uneven pink in the middle. The brine definitely did not reach the center, mainly because the meat side that was sitting at the bottom of the bucket. Or maybe I didn’t let it brine long enough. What I did get right this time was I left the salt out of the rub, and that made it way less salty than my last ones. Flavor was on point. Still learning brisket one cook at a time, and honestly, it’s fun. This is coming from someone who used to be intimidated by brisket for years. But once you start dabbling, you’ll surprise yourself with how good you can get. Pay attention to the details and trust the process. 𝙎𝙈𝙊𝙆𝙀𝘿 𝙋𝙊𝙍𝙆 𝘽𝙀𝙇𝙇𝙔 𝘾𝙃𝙄𝘾𝙃𝘼𝙍𝙍𝙊𝙉 This is one of those cooks where you’re constantly tweaking things to see what gives you better, more consistent results and that’s what makes it fun for me. That’s why I had to include a version of it in my new cookbook, which is out now!! And honestly, it’s one of my personal favorites. The cookbook version is something I first learned back in 2022 from my brotha and legend @bigjavs_bbq when he came through for one of my very first Meat-Ups. For this version, I salted it overnight to draw out more moisture from the skin. I’ve found that when you double salt it like I did here, there’s way less chance of ending up with rubbery skin. I also scored the meat side and hit it with a low-sodium rub and nope, it didn’t come out salty at all! Hands down, it’s one of the best bites in BBQ smoked, tender pork belly (not the hard, crunchy fried kind though I love those too), topped with extra crispy, crunchy, crackly skin. Bacon Wrapped Burnt Ends One of my favorite ways to do pork belly burnt ends is by wrapping them in even more bacon—especially when it’s quality stuff like @Tender Belly🥓 🥓 I actually made these same burnt ends back in 2021 for my very first influencer competition in Vegas, and took home 🥉… which was pretty dope! The freshly cut and crispy jalapeños is such a great contrast for pork belly burnt ends. 💯 @TenderBelly is now stocked in @Costco Wholesale stores across SoCal and Hawaii, so go grab some of the best bacon out there. Same quality bacon I use for all my viral candied bacon recipes. _______________________________________ Instructions: • Cube up pork belly, hot sauce as a binder then season w/ your favorite sweet BBQ rub. • Cut bacon in half then wrap pork belly. Season the tops then into a 225F smoker until roughly 190-200F. • Coat in your favorite BBQ sauce then back onto smoker for 10min. • Remove from smoker then dap more BBQ sauce and top with freshly cut jalapeños and enjoy. #porkbelly #porkbellyburntends #burntends #baconlovers

𝘽𝙍𝙄𝙎𝙆𝙀𝙏 𝙎𝙊𝙋𝙀𝙎 Sopes are a traditional Mexican street food made with a thick, fried masa base and a raised edge to hold all the toppings. I’ve had them a bunch of different ways but never with brisket 🤯. So for Cinco de Mayo, I figured why not give this classic a BBQ twist? I even smoked the sope with refried beans. Might have overcooked them a little bit to some but to me this was perfectly flavorful and tender! 💰 _______________________________________ 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨: • 1lbs of scallops • @tonychacheres More Spice 𝘿𝙧𝙚𝙙𝙜𝙚: • 2 eggs • @tonychacheres Louisiana Pepper Sauce • @tonychacheres Seasoned Fish Fry 𝙏𝙤𝙥𝙥𝙞𝙣𝙜: • 2-4 tbsp melted butter • 1 tbsp garlic paste • 2 tsp @tonychacheres Louisiana Pepper Sauce • 1 tsp dried parsley 𝙄𝙣𝙨𝙩𝙧𝙪𝙘𝙩𝙞𝙤𝙣𝙨: • Olive oil as a binder then season scallops and set aside. • In a small bowl add 2 eggs, hot sauce and mix well. • In another small bowl pour in contents of the fish fry. • Coat scallops in fish fry, then eggs, then fish fry again. • Pan fry in 350F in your preferred oil until golden brown on each side. About 2-3 min a side. • Topped with melted butter and enjoy. Buffalo-style wings have always been my go-to, but I’ve always felt like they were missing something… more texture, more layers of flavor. So I took that classic flavor and turned it all the way up. I started with the already fire @tacticalories Helldiver Buffalo sauce, then hit it with some @blazingstarbbq BBQ sauce for sweetness, their Reaper Rub for that kick of heat, and finished it off with everything bagel seasoning and red pepper flakes for some serious texture. It still tastes like the Buffalo wings everyone knows and loves but on a whole different level. That’s why I called them Buffalo Wings on Steroids. That forge hits around 3,000°F and sears instantly, giving the meat an unreal, flavorful crust. Wild 🤯 This setup was at @Montana Knife Co , and the forge we used was one of @joshsmithknives personal ones at their shop out in Montana. Such a cool experience. The other was done @alfrugoni style over open fire and a rippin hot upside down cast iron for an awesome crust.
